Zero-Trust Data Sync: Offline Optical Key Exchanges

How do you securely synchronize critical health telemetry between a patient and a remote caregiver without allowing the central corporate cloud to read the data? Most systems fail by transmitting plain-text data to centralized APIs, creating massive HIPAA honeypots and stripping the patient of data sovereignty.
